Barbecued Shrimp

  • 1 pound shrimp, deveined but preferably with shell still on
  • 3/4 C. white wine
  • 3 ounces unsalted butter
  • 1/2 of a small red onion, @ 1/3-1/2 C.
  • 5-6 springs of fresh thyme
  • 3-4 large cloves of garlic, minced
  • 1/2 T. red pepper flakes
  • 1/2 T. whole black peppercorns
  • 2 bay leaves
  • A sprinkling of kosher salt

Put all the ingredients in a roasting pan and roast in the oven at 375 degrees for @ 18-20 minutes.

Although Adele’s recipe didn’t include these, I added a few drops of Worchestershire sauce, and a sprinkling of freshly chopped rosemary (a decidedly more California than Louisiana touch-just because I like it, and because today I found out that rosemary means “dew of the sea”- how romantic is that. And , of course, you can always add more garlic and/or pepper, if you’re up to it…

Oh- and be sure to have some great French bread on hand to sop up the tasty juices.

BonAppetit!
